This post is about apricots (he,he) As you can see it has been a year (we are in summer) we had a lot of apricots, and so will understand that in some posts back to apricots is short term but abundant, and if one does not jam or other things ripe very fast, last year almost did not have apricots. So you can store o bookmarked these recipes for summer. I have other jam recipes in my labels.
This recipe is a little different because apricots go with a little orange juice, is great and wonderful color.
This recipe is adapted of one of Gloria Frugone a nice chef and cook from here.
Ingredients
1 kilo fresh and ripe apricots
500 grs. sugar
grated peel of one orange(only the orange peel)
the juice of two oranges
1. Wash the apricots, cut in quarters or medium without the seeds.
Place with the sugar in a large pot medium heat, add the peel and orange juice.
Stir well.Wait until boil.
2. Low the heat and let cook always stirring time on time with a woodspoon.
Cook about an hour always stirring.Always slow heat.
As the mixture thickens and reduces, stir frequently to make sure the jam isn’t burning on the bottom.
5. When the jam looks thick and is looks slightly-jelled, turn off the heat and put a small amount of jam on the chilled plate. Put back in the freezer for a few minutes, then do the nudge test: If the jam mounds and wrinkles it’s done. If not, continue to cook, then re-test the jam until it reaches that consistency..
Let in the pot until is warm.
Put the jam into clean jars. Cover tightly and let cool to room temperature. Once cool, refrigerate until ready to use.
This jam will keep up to one year if refrigerated.
I place label to know what of these is with orange. Always is a nice idea place labels with the date you made the jam.
Tip: To make 2 kilos only double the sugar.

Mermelada de damascos (albaricoques) con naranja
Hemos tenido un año abundante en damascos (que duda cabe) para los que sepan de esto los damascos se maduran rápidamente, un día estan algo verdes y al otro día están listos, así que si uno va a hacer mermelada hay que aprovechar, así que iré alternando pero aparte de la mermelada (que ya he hecho varias veces) tengo algunas recetas. Para los de Chile pueden aprovechar y los de España u otras partes que estan en invierno, guarden las recetas.

Debo decir que los damascos están maravillosos, eso de pasear debajo de los árboles y comerse uno directo del árbol es casi como mágico (así pienso yo) de hecho estos son totalmente orgánicos, sin pesticidas ni nada parecido.
Me encanta hacer mermelada porque no hay comparación con la comprada, sorry, pero es verdad.
Ingredientes
1 kilo de damascos frescos y maduros
500 grs. de azúcar
la ralladura de 1 naranja
(sólo la parte naranja)
jugo de 2 naranjas
1. Lavar los damascos una vez pesados (tener una pesa pequeña en la cocina es muy práctico)
cortarlos en cuartos o en medios, quitarles las semillas (dejar unas dos por la pectina) y ponerlos en una olla frande junto con el azúcar, agregar la ralladura de naranja y el jugo de naranjas.Revolver bien y esperar hasta que hierva un poco.
2. Una vez que hierva bajar el fuego(la coloco sobre el tostador manual pero parece que solo lo usamos en Chile) bueno poner a fuego muy suave e ir revolviendo siempre de vez en cuando con una cuchara de palo.
3.Cocinar por lo menos una hora hasta que esté a punto, debe quedar espesa. Poner un poco en un plato y dejar enfriar si no se desliza está bien.
Dejar enfriar un poco en la olla antes de poner en los frascos, tapar con un paño y despues colocar las tapas cuando ya está fría.
Es bueno ponerle etiquetas (uso esas de los niños) porque así uno sabe la fecha o de que es porque como en este caso hay que diferenciar cual es con naranja.
Si se quiere hacer 2 kilos solo doblar la cantidad de azúcar.
